This weeknight Spinach Pasta recipe is quick to prepare. The pasta is tossed in a garlic-infused olive oil sauce. Then, add the za'atar, lemon, and parmesan cheese. While the spinach may not be fresh, the tomatoes will retain their flavor and will remain soft after the spinach is added to the sauce. The spinach is cooked for about 2 minutes. Then, the spinach is added to the sauce.

  • Cook the pasta like a pro. Allow to drain. Set aside.
  • Put a good amount of olive oil in a very hot pan.
  • Saute' the garlic and paprika.
  • When the garlic turns golden brown, toss in the cherry tomatoes.
  • Cover the pan and let the tomatoes create some juice.
  • Season with fish sauce and pepper.
  • Add the spinach. Stir well.
  • Put the stove to a med-low at this point.
  • Add hot water to prevent the sauce from drying out.
  • Season the sauce with fish sauce and pepper.
  • Add the seasoned pasta.
  • Turn off the stove and stir well.
